New York Times Vegetable Shepard’s Pie Recipe Review

I have not been on here in a long time but I wanted to take this moment to share one of my favorite new dishes!

Shepard’s Pie is one of my childhood favorite recipes. It is Irish and usually contains a creamy but deeply rich mix of beef with vegetables topped with light and fluffy mashed potatoes. Recently, I was missing this dish a little bit extra so I decided to go to the internet to look for a vegetable twist to this classic dish. I was able to find one on the New York Times Cooking web page here!

After making the recipe, I instantly fell in love with this Vegetable Shepard’s Pie and has traveled to my list of favorites. However, this recipe took an insanely long time to make.

Below are a few quick tips and tricks that helped me make this recipe and my own review of the recipe!

Tips and Tricks:

If you forget to thaw the frozen peas like I did, put them on or next to the warm stovetop in a heatproof dish to let thaw during the cooking.

Depending on the saltiness of the parmesan cheese, adjust how much salt you add. My cheese was more salty than usual so the dish turned out slightly too salty.

If you don’t have the exact ingredients for the potato layer, just make mashed potatoes anyway you usually do, it’s all the same!

Because of the time it took to make this dish, I would recommend prepping everything up until the part where you need to put the whole dish in the oven to bake. This way you only have to wait a fraction of the time when your ready to eat.

Oh and also, fair warning, this dish is very decadent even though it is made of vegetables! I would suggest serving a tiny salad of greens with a vinaigrette dressing beforehand.

Overall Review:

I would definitely recommend this dish for dinner parties and family dinners alike. While this dish takes some planning out time-wise, it is flavorful, rich in taste, and one hundred percent worth it! This dish is so good that deserves a spotlight of its own, definitely not a mere substitute for the traditional meat shepherds pie.

This dish has slowly become a family favorite as we have made it two times already during quarantine. I hope you and your family or friends can enjoy it as much as we did!
